The local diet in this area has always consisted of dairy- and meat-based products, so expect a lot of cheese in all its forms and by-products. The restaurant works closely with the local community of foragers, shepherds, cheesemakers, hunters and fishermen. The region is teeming with trout, deer, goats, fruits and wild plants – all are incorporated into their fabulous dishes.
