JB Restaurant is a Bratovž family-run marvel. It all started off in 1992 when Janez Bratovž, applied his priceless experience abroad to Slovenian cookery. JB is the first Slovenian restaurant to make it onto the World’s 50 Best Restaurants list. Top chef JB is aided by his right-hand-man in the kitchen, his son Tomaž, daughter Nina, an Advanced Sommelier, and his wife Ema, who is basically the restaurant’s manager.

Although stationed in the centre of Ljubljana, JB presents visitors with a tranquil and elegant escape from the noise of the city outside. JB’s menu is based on the complex yet simple relationship between the four elements: Earth, Water, Air and Fire. In gastronomy that would be sweet, salty, sour and bitter. Ingredients are chosen with care and preserve that natural flavour, which has all too often disappeared in modern-day dishes. The cleverness behind the chef’s masterpieces have earned this family restaurant prestigious awards and have won over the loyalty of many a pleasure hunter.
